Pumpkin in Greek is a simple, unpretentious vegetable dish. Now, in pumpkin season, I cook this dish every other day for breakfast. It cooks quickly, but it turns out very tasty and aromatic. In addition, Greek pumpkin is a lean dish that can diversify the menu. I am sure that once you try this dish, you will cook it as often as I do.
To cook pumpkin in Greek, you need to prepare all the necessary foods according to the list.
Cut the pumpkin into large cubes. You should not take the amount of pumpkin strictly according to the recipe, you can take more. The main thing is that the pumpkin fit in a pan in one layer.
Pour olive oil into a frying pan and heat. Put the pumpkin pieces and fry on all sides until golden brown. In principle, you can take sunflower oil, choose according to your preference.
Next, the pumpkin must be fried with spices. Add pepper, salt, dry basil and tomato paste to the pan.
Chop the garlic coarsely, add it to the pumpkin, mix everything and fry for 1 minute.
Prepare a baking dish for pumpkin. Glass or ceramic will do. Put the pumpkin fried with spices in a mold and pour in 2 tbsp. water. Tighten the form with foil and place in an oven preheated to 180 degrees.
Cook the pumpkin for 20-25 minutes. Greek pumpkin is delicious both hot and cold.
