The original recipe for delicious borscht with the addition of nettle. Boiled or raw eggs can be added to the soup. It will be delicious, but in different ways)))
Ingredients
Boiled beets - 1 pc. (150 g)
Potatoes - 2 pcs. (200 g)
Carrots - 30 g
Onions - 30 g
Celery stalk - 30 g
Fresh nettle - 1 bunch (100 g)
Steep boiled eggs - 1 pc. per serving
Cooked smoked brisket - 60 g (optional)
Smoked sausage - 50 g (optional)
Tomato - 1 pc. (50 g)
Sunflower oil - 20 ml
Salt - 10 g
Greens - 10 g
Water - 1.5 l
Frozen spinach - 60 g

Nettle borsch with egg can be cooked in different ways: with or without meat. Today I propose a recipe with the addition of smoked meats. Take the groceries on the list.
Fill the nettles with plenty of water to settle all the earth and sand, which at first glance are not even visible. Change the water several times.
Pour boiling water over a bunch of nettles to avoid scalding when slicing.
Discard the nettle in a colander. It will significantly decrease in volume.
Peel the potatoes, cover it with water, cook until half cooked.
Prepare the vegetable slices. I took boiled beets and cut them into cubes. If you have raw beets, then the dressing will take longer, it is better to stew the beets separately first.
Cut the brisket, add the sausage.
Cut the rest of the vegetables into small cubes - they are needed for dressing.
Fry the brisket pieces in sunflower oil.
Add onions and carrots, continue frying.
Cut the sausage into small cubes.
Put everything in a skillet, add a couple of frozen spinach washers - it will add vitamins.
Send the beet cubes there and stew everything together.
Send the resulting dressing to the soup. Salt. Bring to a boil, cook for 5 minutes.
Chop the nettles and herbs.
Put nettles in the borscht, bring to readiness under the lid with a slow boil (another 5 minutes), and turn off the stove. Let the borscht brew. If the borscht is supposed to be eaten all at once, then you can cut the eggs into cubes and add directly to the pan.
And you can add boiled eggs to the plates - it's beautiful and appetizing!
Add fresh herbs and serve borscht with nettles and eggs for lunch with sour cream.
