Crispy vegetables flavored with olive oil and Provencal herbs are an excellent appetizer or side dish for meat and fish, and can also be an easy independent dish. For not having a grill, I cooked everything in a regular frying pan.
Cut the peppers, onions and garlic into large slices.
Fry quickly in olive oil over medium heat for 2 minutes.
Peel the zucchini and cut into slices.
Add to vegetables. Season with salt to taste and fry for just a couple of minutes.
Cut the tomatoes and hot peppers (optional) into pieces.
And add to vegetables a minute before turning off the heat. Sprinkle tomatoes with a pinch of sugar to neutralize acid and Provencal herbs. Check for salt and serve.
An Italian-style light snack or vegetable garnish is ready.
