Once in a small restaurant we were served cutlets with an interesting side dish of zucchini and tomatoes. The tomato, however, was a large, diced, otherwise I kept the recipe in the form in which I received it from the waiter.

Stewed zucchini with tomatoes in a pan is a simple and tasty dish that can be cooked in a matter of minutes. It goes very well as a side dish to the main course - both fish and meat.

Prepare all the foods on the list. Instead of a large tomato, I took cherry tomatoes, you know, the side dish is tastier with them. I think cherry tomatoes add more sweetness to the dish.

Wash the zucchini, cut into strips. I first cut them into circles, and then I cut each circle into stripes, you can do it your own way.

Heat vegetable oil in a frying pan, preferably olive oil. Add zucchini to the oil and simmer them over medium heat for 5-7 minutes, they should let the juice lightly.

Wash the cherry tomatoes, dry and cut in half lengthwise.

Add tomatoes to the courgettes.

For spices, I add a mixture of Provencal herbs, you can add your favorite spices.

Also add salt and pepper to taste.

Pour in a couple of tablespoons of water. Cover the pan with a lid and simmer vegetables for 8-10 minutes over low heat.

Pass the garlic through a press, add to the pan to the zucchini and simmer the contents of the pan for a couple of minutes, stirring occasionally.

The stewed zucchini with tomatoes in the pan turned out to be excellent! Serve them with meat or fish dishes.
