Lentils are a rare guest on our table and absolutely in vain. It is rich in protein, high in iron and folic acid. Lentils are cooked pretty quickly. It goes well with mushrooms and various vegetables. Today I want to share with you a recipe for cooking it with mushrooms for a side dish or as a lean dish.
Prepare the food you need.
Rinse lentils well and place in a saucepan. Pour 3 cups of water over lentils and put on fire.
Bring to a boil. After boiling, reduce heat, remove foam, season with salt, and cook for about half an hour. Skim off the foam as it develops. The lentils should be soft.
Place the lentils in a colander to drain off excess liquid, if any.
Peel the onion and garlic and chop finely. Fry them in vegetable oil for 2 minutes.
Grate the carrots on a fine grater. Add the carrots to the onions and cook for another 3-4 minutes.
Wash the champignons well, peel and cut into large pieces. Add the mushrooms to the rest.
Fry for about 8-10 minutes more. Season with salt and pepper to taste.
Pour the prepared lentils into the pan. Mix everything well.
Sprinkle with chopped herbs and stir again. You can add some tomato sauce if you like.
