Stewed eggplants with vegetables can be served hot as an independent dish and as a side dish for meat or chicken dishes, as well as tastes cold. A variety of fresh or dry herbs are suitable for this vegetable dish as aromatic herbs: basil, dill, a mixture of Italian or Provencal herbs, etc.
Prepare the ingredients:
To remove the bitterness from blue eggplants, cut them into wedges, sprinkle with salt and let sit for 20-30 minutes.
Then remove any juice and excess salt.
Chop the onion, crush the garlic cloves.
Cut the zucchini into cubes or wedges.
Cut sweet pepper into strips, tomatoes - into slices.
Tomato skin films do not interfere with me, but if you want, you can remove them from the tomatoes.
Fry the onion in vegetable oil, salt, add garlic.
Add eggplants, simmer with onions for a few minutes.
Then add the zucchini, tomatoes and peppers, reduce heat to medium and simmer for about 20 minutes in its own juice.
Stewed eggplants with vegetables are ready.
Add feta cubes to portions if desired.
