Easy to prepare, delicious lean side dish of stewed potatoes with champignons (stewed in its own juice).

A side dish of stewed potatoes with mushrooms is perfect for both meat and fish dishes. This dish should also appeal to vegetarians and is great for fasting.
To stew potatoes with champignons, prepare the foods according to the list. Wash the potatoes with a hard sponge, peel the onions and carrots, clean the mushrooms with a clean kitchen sponge.
Heat vegetable oil in a skillet. Cut the potatoes lengthwise into four parts, fry for 2-3 minutes until lightly golden brown.
Add the onion, cut into thin strips, turn the heat down, cover the pan and cook the potatoes and onions for 3-4 minutes.
During this time, the onion will become soft, add the chopped carrots, cook for another 4-5 minutes under the lid.
When the onions and carrots are slightly stewed, add the chopped mushrooms, cover with a lid. In about two minutes the mushrooms will start juice and all the vegetables will be stewed in their own juice. Cook vegetables until potatoes are cooked through.
When the potatoes are soft, add the chopped garlic, cook for another 1-2 minutes, sprinkle the garnish with fresh chopped herbs, salt and pepper, stir the dish. Turn off the stove, cover the pan with a lid and let the dish brew for 10 minutes.
Serve the mushroom stew as a side dish or as a separate dish.
