I want to offer you this recipe - buckwheat with fried vegetables. Vegetables can be absolutely any, I have it: onions, zucchini, cauliflower and tomatoes. In the absence of the latter, it is quite possible to use whole tomatoes in their own juice, draining the juice from them. Or it is possible with tomato juice - then you get a very tasty porridge. You can also take frozen cabbage.
Buckwheat with fried vegetables may well become a dinner in itself, or you can serve it as a side dish (we had fried fish).
For people on a diet, such buckwheat will also be very useful.
To prepare buckwheat with fried vegetables, we will prepare the products according to the list.
We wash and cook buckwheat according to the instructions on the package. If for some reason it is not available, just know that buckwheat, like rice, is cooked in a 1: 2 ratio, i.e. for one glass of buckwheat there are two glasses of water. That's all the arithmetic.
Let the water boil, then cover the pan with a lid, reduce the gas and cook until tender.
While buckwheat is boiling, we cook vegetables.
Finely chop the onion and garlic, fry in a little sunflower oil.
We fry over high heat: this way you will be able to keep the vegetables as fresh as possible, with a lot of vitamins.
Add the zucchini cut into cubes (you don't need to peel the zucchini) and the cauliflower disassembled into inflorescences.
Fry, stirring occasionally, for a couple of minutes. The cabbage should remain crispy.
Add the diced tomato to the vegetable mixture.
We fry for a couple of minutes. We remove from the fire.
By this time, buckwheat is already ready.
We spread it with vegetables, salt and pepper to taste.
