Champ is a traditional Irish dish. Basically it is mashed potatoes made with butter, milk and green onions. A simple, nutritious and delicious dish.

The Irish cook champ almost all year round and serve both as a side dish and as an independent dish. Its delicate taste with spicy notes of spices and refreshing splashes of green onions goes equally well with stews, meat dishes, vegetable dishes and even simple scrambled eggs.

The way of serving and serving dishes to the table also has its own zest: champ is served in deep bowls and is most often eaten with a spoon. In the center of each portion of the dish, a small depression must be formed into which a piece of butter is put. The heat melts the butter, forming a kind of creamy "gravy" into which you can dip the mashed potatoes during the meal. The combination is incredibly appetizing!

Pour the potatoes with cold water and add a few pinches of salt. Young potatoes can be pre-peeled and cut into quarters. Potatoes with already formed skin are best cooked without peeling.

Bring water to a boil and cook potatoes for 15 minutes or until tender.

In the meantime, prepare the milk dressing. Measure milk into a small container and bring to a boil. You can also use buttermilk or cream (warmed) instead of milk.

Once the milk has boiled, turn off the heat and add chopped green onions, parsley and bay leaves to the milk. Let the mixture sit for 3-4 minutes, then remove the bay leaf.

Drain the hot water from the potatoes and mash the pieces with a crush.

While continuing to knead the potatoes, gradually add the herbal milk dressing.

Beat the puree with a blender for 1 to 2 minutes for a silky consistency. Season with salt and ground black pepper to taste.
