Today I want to share with you a recipe for a simple and quick dish of green beans. Let's prepare an appetizing everyday Greek dish Fasolakia Giaxni or green beans stewed in tomato sauce. This light, healthy and tasty vegetable dish can be served with fresh bread, a hearty cereal side dish, or on your own, in the Greek style, sprinkled with feta cheese and herbs. A great option for lunch or dinner, which will not cause a hassle in the kitchen.
Ingredients
Frozen green beans - 400 g
Tomato paste - 1-2 tablespoons
Tomatoes in their own juice - 400 g
Italian Herb / Oregano Blend - 1-2 tsp (taste)
Feta cheese - 150-200 g
Fresh herbs / parsley - for serving
Vegetable oil - 1-2 tablespoons
Onions - 1 pc.
Garlic - 2-3 cloves
Salt to taste
Sugar to taste
Ground black pepper - to taste

For cooking, you will need the ingredients listed. In order to simplify and speed up the cooking process as much as possible, we use frozen green beans and tomatoes preserved in our own juice.
Heat vegetable oil over medium heat. Add finely chopped onions and, stirring occasionally, fry for 5-7 minutes, until soft and golden brown.
Then add the chopped garlic, a pinch of salt and sugar, and fry for another 1-2 minutes.
Add frozen green beans. Stir and fry the mixture for 2-3 minutes, so that the frost on the surface of the beans melts and the resulting moisture evaporates.
Add 1-2 tbsp. tomato paste. Stir in and fry for another 2 minutes.
Add the peeled tomatoes, cut into small pieces, in your own juice.
Stir, bring the mixture to a boil and add dried herbs, ground black pepper, a little salt and sugar to taste. If you plan to serve a dish with feta cheese - at this stage, you need to add a little salt, so that after adding the cheese, the dish does not turn out oversalted.
Reduce heat so that the mixture is constantly simmering, cover the pan with a lid and cook the beans for 10-15 minutes. In order for beans to remain slightly elastic, as a rule, whole pods need to be cooked for no more than 15 minutes, chopped ones - 10-12 minutes. To make the beans softer, increase the cooking time to 18-20 minutes.
After turning off the heat, sprinkle the dish with feta cheese, finely chopped parsley, or fresh herbs to taste.
