In French cuisine, sauté is a vegetable stew with meat cooked over high heat. In my opinion, this dish looks more like a great appetizer, which is a great addition to any second course. Eggplant sauté is prepared very quickly, be sure to try it.
Peel the eggplant and cut into cubes.
Put the eggplants in a preheated frying pan with olive oil and fry them over high heat, stirring for about 5 minutes.
Meanwhile, cut the tomatoes into small pieces.
Reduce heat, add tomatoes to eggplant, stir and simmer for about 10 minutes.
