Lovers of non-meat food approach cooking vegetables on the grill with particular delicacy. For them, vegetable kebab is not just an addition or an appetizer, as for meat-eaters, but a real complete picnic dish. At the same time, zucchini with bell pepper, properly marinated and then grilled on charcoal, will be appreciated not only by vegetarians, but even by those who are completely indifferent to dietary nutrition.
To cook deliciously grilled vegetables, you need fresh young zucchini and sweet bell peppers. Plus onions, lemon, salt and black peppercorns for the marinade.
We take red and fleshy pepper. It needs to be washed, well peeled from the stalk and seeds, and then chopped into triangular slices. Only rinse the zucchini and cut into slices of medium thickness. We get rid of the husks and chop the onions in large half rings, and divide the lemon into two parts.
We put vegetable ingredients and onions in a dense plastic bag - this is an ideal device for pickling vegetables. Directly in this "container" vegetables will move to a picnic.
Further, the whole slicing is abundantly seasoned with lemon juice, as well as salt and pepper, ground in a mortar.
Mix the contents of the bag with our hands with extreme care. Do not lay out the remaining lemon halves. Tightly tie the bag together with the lemon and leave the vegetable components to marinate for 5-6 hours.
Marinated zucchini and bell peppers should be laid out on a grill net close to each other and pressed well.
