This potato recipe is my favorite side dish during the fall / summer season when the stalls in the markets are overflowing with fresh vegetables. To add vibrant colors to the dish, you can crumble a couple of bright red tomatoes. Garlic and black eggplant peel give the potatoes spice. Therefore, these two components allow you to vary the "piquancy" of the dish for an amateur.
