Delicious and hearty lentil porridge in tomato sauce. Can be served as a separate dish or as a side dish. Lean second dish.
Green lentils - 1.5 cups
Water - 2 glasses
Tomato juice - 0.5-1 glass
Carrots - 1 piece
Onions - 1-2 heads
Celery - 1-2 stalks
Garlic - 1-2 cloves
Vegetable oil - 2-3 tbsp. spoons
Ground coriander - 0.5 tsp

Prepare lentils, tomato juice, carrots, celery, onions, garlic, oil, spices, and salt.
Fry chopped onions, carrots and celery in vegetable oil, add garlic and coriander. Season with salt at the beginning of frying (1-2 pinches or to taste).
Add lentils and cover with hot water. Bring to a simmer, reduce heat and cook, covered.
After 15 minutes, pour in the tomato juice and cook for another 15 minutes over medium heat, covered.
The lentil porridge is ready. Serve as a stand-alone dish or as a side dish. Season with salt to taste, and it may be enough to enhance the taste from any sauce (tomato, ketchup, etc.) or gravy (meat, etc.).
