I present to you a simple dish of Aramaic cuisine - rice noodles. This dish can be served as a side dish or as a main dish, for example with a salad.
We need the following products:
Melt butter or margarine in a frying pan, add raw noodles. I take a handful of vermicelli for a glass of rice, it's a little less than half a glass, take it to taste.
Fry until light brown, stirring constantly, over maximum heat. Carefully, burns quickly, if not sure, it is better to fry over medium heat.
Reduce heat, add rice, stir quickly, because noodles can burn during this time.
Add spices and salt, continue to fry the rice for several minutes until it is almost transparent. I have a mixture of spices - black pepper, red pepper, paprika, anise, nutmeg, rosemary, thyme, coriander, ginger, marjoram, dill, dried garlic, you choose according to your tastes.
Add 2 cups boiling water or a little more, depending on how much vermicelli you have taken, be careful!
Close the lid and leave for 10 minutes, until all the water is absorbed into the rice.
Continue frying the rice for the next 10 minutes, stirring continuously. In this case, the rice will not be fried, but will simply reach the desired state, the remaining water will evaporate and it will be crumbly. We taste it, add salt or spices if necessary. I add some more garlic powder at this stage.
The rice noodles are ready. You can serve such rice with sauces, vegetables, meat (preferably in sauce). I have today with Esenija eggplant and Lana's Stroganoff chicken fillet.
