A light and simple vegetarian (lean) dish that can be prepared quickly using a multicooker.
Ingredients
Zucchini (young) - 1 pc.
Carrots - 1 pc.
Bulb onions - 2 pcs.
Rice - 100 ml
Water - 180 ml
Vegetable oil - 2 tbsp.
Tomato paste - 1-1.5 tbsp
Garlic - 1-2 cloves
Salt to taste
Ground black pepper - to taste
Parsley - a few twigs

Zucchini with rice is a popular dish that comes in a variety of flavors. Various vegetables can be added to it - onions, carrots, bell peppers, garlic, cabbage, tomatoes (sometimes tomato paste replaces them). Zucchini with rice can be served as a side dish or as a completely independent dish. The multicooker simplifies the cooking process, and it, in turn, becomes more useful.
To cook zucchini with rice in a slow cooker, you will need the following products.
Peel onions and carrots, mine. Dice the onion and grate the carrots on a coarse grater.
My young zucchini, cut into small pieces along with the peel.
I turn on the multicooker on the "Fry" mode for 20 minutes. I pour vegetable oil into the multicooker bowl, add onions, fry them (stir the onions with a spatula).
I add grated carrots and tomato paste.
I stir the vegetables and fry for a few more minutes. I add the sliced zucchini.
I mix the ingredients and fry for about 5 minutes more.
Then add rice to the multicooker bowl.
I chop the peeled garlic. I add garlic, salt and black pepper to taste to the multicooker, add the freshly boiled water.
I stir the ingredients with a spatula.
I close the lid of the multicooker and turn on the "Rice" mode. I cook the dish until the end of the program.
Zucchini with rice in a slow cooker turned out to be bright, tasty and aromatic!
Serve the dish sprinkled with chopped parsley.

Important additions to the recipe
If overripe zucchini is used, the hard skin is peeled and the seeds removed.
