Rice with mushrooms and vegetables is a kind of bright lean pilaf. Can be served as a separate dish on the Lenten table.

Cook rice with mushrooms and vegetables - a great variety of pilaf or Spanish paella. The dish can be served on a lean or traditional table, and even on a festive one - it is not only very tasty, but also bright and colorful.
You can take any rice, from me it is ordinary Krasnodar, in this case it fits perfectly. If you want to bring the dish closer to paella, be sure to fry the bottom crust until golden crunch - it will be just chic!
Take the groceries on the list. You can vary the set of vegetables to your taste and the contents of your refrigerator - this is another plus of the recipe.
First, boil the rice - I do it in the microwave: rinse the rice, add water and send it to the microwave at 80% power for 10 minutes. You can cook the dish according to the usual pilaf algorithm - this is your choice.
You can add a little vegetable oil - the rice is smooth, crumbly and fragrant.
While the rice is cooking, tackle the vegetables. I have some frozen, some fresh. Rinse everything and let the water drain, defrosting is not even necessary. Fry medium-sized pieces of onion in hot oil until light transparency: the oil will absorb the aroma of the onion and give it to all other components, as a result, the whole dish will acquire a touch of completeness.
Add the chopped chanterelles. The main thing is to quickly fry all the ingredients over high heat so that the vegetables do not have time to fall apart.
Add pumpkin and beans. Stir quickly.
Then add the peas and coarsely chopped red bell peppers to the pan. Fry quickly again.
Finish with a few large tomato slices.
Combine vegetables with rice and cook together - in a skillet or microwave.
Serve rice with mushrooms and vegetables in portions or on a common large platter like pilaf.
