Rice with mushrooms is very popular in Italy, tomato sauce is added to it and a very tasty dish is obtained, which can serve as an excellent side dish for various types of meat, chicken, fish, and can also act as an independent dish. The dish turns out to be very bright, light and tasty.
Pour olive oil into a frying pan, put finely chopped garlic in it and fry it until a light garlic smell.
Finely chop the onion and add to the garlic. Fry together until soft.
Put the champignons out of the jar and drain off excess liquid.
Finely chop the mushrooms and add to the pan.
Cut sweet peppers into small cubes.
Add the chopped pepper cubes to the skillet and fry with other vegetables for 7 minutes.
Boil rice in a saucepan, put it in a sieve.
Place hot rice in a skillet.
Stir gently, season with salt and pepper.
Grate Parmesan cheese and a second type of cheese (for example, Gouda, Edam, Cheddar, etc.).
Place all the cheese on top of the rice.
Rice with mushrooms is ready. Put hot rice in cups, tamp tightly.
