Dishes with couscous and vegetables are a great option for a side dish or main course that is quick and easy to prepare. Despite the fact that couscous is oriental groats, and there dishes made from it are more popular, couscous can be seen more and more often on the tables of Europeans.
Today I want to offer you my favorite version of couscous with vegetables, which is very good because you can eat it in Fasting, if cooked in vegetable oil or steamed, and on ordinary days, seasoned with butter. Green beans and green peas contain healthy vegetable protein that is also good for filling.
We will prepare all the products according to the list. For this dish, both fresh vegetables and frozen ones are suitable. Pre-frozen vegetables do not need to be thawed.
Couscous should be prepared according to the instructions on the package. Usually, stores sell already processed cereals, which only require steaming with boiling water.
So, pour boiling water over the couscous.
Add salt to the couscous.
We cover the bowl with cereals with a saucer, and you can also cover it with a kitchen towel. Leave the couscous to steam for 10-15 minutes.
In the meantime, let's get to the vegetables. You can steam vegetables, you can boil them in salted water, you can stew them in a pan.
I use frozen vegetables for this dish. Cut the green beans into small sticks.
We heat vegetable oil or butter in a frying pan, it really depends on you whether you want to get a lean or slow dish in the end.
Put the green peas and green beans in the oil.
Add salt and black pepper.
Chop fresh mint leaves finely, you can take dried mint. Add mint and some nutmeg to the vegetables. We simmer vegetables in a frying pan for 10-12 minutes, during which time they will let out juice and will be stewed in liquid.
If you are preparing a dish with fresh vegetables, add 100 ml of water to them while stewing. We simmer vegetables until fully cooked and all liquid has evaporated.
Meanwhile, the couscous has already steamed. Slightly fluff the cereal with a fork.
Put the couscous to the vegetables in the pan.
Stir vegetables and couscous and remove from heat.
Couscous with green peas and green beans is ready!
