If you like vegetable side dishes, then this recipe for tomato and bell pepper lecho with garlic is fine for you. Somehow it so happened that in our understanding "Lecho" is a preparation for the winter. In Bulgaria, the country of origin, lecho is just a side dish of vegetables in their own juice or vegetables fried in oil. Traditional vegetables for lecho are bell peppers, onions and tomatoes.
I don’t prepare lecho for the winter, because I have nowhere to store it, but as a side dish for main dishes I cook lecho very often. My family's favorite lecho is from tomatoes, peppers with garlic and chili.
We will prepare all the products according to the list.
Let's prepare the tomatoes. Break half the tomatoes in a blender, cut the second part of the tomatoes into slices.
Pour the tomato juice into a saucepan and put the saucepan on the fire. Let the juice boil, remove the resulting foam. Cook the juice for another 10 minutes.
Wash the bell pepper, cut it in half lengthwise, remove the seeds and partitions.
Cut the peppers into one bite-sized squares. For a side dish, this cutting method is the most convenient.
Put the sliced tomatoes and pieces of bell pepper in boiling tomato juice.
Add sugar and salt to vegetables. We cook lecho for another 15 minutes. We love to keep the vegetables in lecho crisp. If you prefer soft vegetables, cook the lecho for 10 minutes longer.
Cut the chili into rings. Garlic can be passed through a press or cut into thin slices.
Add garlic and chili to the lecho. Let the lecho boil again, cook for another 5 minutes and remove the lecho from the heat.
Ready-made tomato and pepper lecho with garlic is good both hot and cold.
We serve lecho hot as a side dish, and cold as a topping for a sandwich. Enjoy your meal!
