I wrote this recipe for fried pigs for those housewives who understand forest mushrooms. The pig, although it is considered a conditionally edible mushroom, is quite suitable for food. Our grandparents ate pigs for years and rarely complained of stomach problems. Correctly collected and properly prepared pigs cannot be poisoned by healthy people. Weakened children and children cannot, in general, any mushrooms, regardless of their usefulness. So, fried pig mushrooms.
We collected fat small pigs, moreover, 200 km from the city in a dense forest. This is a big plus. For frying, take olive oil and onions. You will also need a lot of salt: both for soaking and for pre-cooking the mushrooms.
Fresh pigs are poured into a basin and soaked for 12-15 hours in cold salt water. In the process, all debris is removed, and the water is changed every three hours. I do not know from what word these mushrooms originated, but it is simply impossible to make them completely pure.
Then the pigs are sent to the cooking pot. It is also recommended to salt the water well. The mushrooms are brought to a boil three times. This removes the foam and changes the water. The pigs are boiled until they are completely immersed in the bottom of the pan. I just cooked them for 1.5-2 hours.
Boiled pigs are removed in a colander and again washed well with water. If the color of your mushrooms becomes too brown after boiling, this is normal.
While the pigs are dripping, chop the onions into cubes. Fry in olive oil until light golden brown.
Attach the boiled pigs to the onion. Continue frying the pigs and onions until tender. It took me almost 45 minutes. In the process of frying the pig, stir regularly. The pan remains open.
Meaty and delicious fried pigs are ready! Who just came up with the idea that they are poisonous, I don’t know?
I am writing the recipe two days after eating the dish. As you can see, everyone is alive and well, but still, the abuse of any mushrooms can lead to some kind of imbalance in digestion.
