I never get tired of being surprised at the versatility of couscous, the minimal time and effort required to prepare dishes based on it. In this case, a juicy tomato is very well complemented by soft couscous with fresh herbs.

The couscous and tomato garnish can also be served as a salad by mixing all the ingredients.

Place the couscous in a bowl, add a little salt and paprika, stir, cover with boiling water, cover with a lid or a flat plate and leave for 10 minutes.

Toss the finished couscous with clean chopped parsley (do not use tough stems).

Wash the tomato, cut into 4 parts, remove the stem and seeds. Cut the resulting tomato "meat" into small cubes of the same size. Add salt and black pepper. Stir.

Using a forming ring, lay out some of the couscous and parsley, tamp loosely.

Put a piece of chopped tomato on top, flatten.

Remove the ring and decorate the finished tomato-couscous garnish with parsley leaves and white or black sesame seeds.
