In Moldova, hominy used to replace bread; it was prepared everywhere from flour or cereals. Moreover, it is customary to call mamalyga both a liquid porridge and a dense one, with a texture reminiscent of a pie or bread. Wealthy people could afford to grind cereals into flour, and those who were not allowed to do this by finances made their own porridge from cereals. We will create just such a variant of the dish!

Hominy is boiled in water with fat. It is now customary to whiten it with sour cream or yogurt of any fat content, and earlier they added pork or goose lard (melted fat), which was stored in jars or pots in the cellar. In the fall, they pricked a pig, if there was one on the farm, reheated the bacon and ate hearty and rich hominy all winter. Shepherds and workers took such a dish with them for the whole day, wrapping it in newspaper or paper, in a canvas bag. On especially holidays, the porridge was supplemented with cracklings.

Now hominy from corn grits will be served to you in any restaurant or cafe, flavored with sour cream, yogurt.

Rinse the cornmeal thoroughly in water until the liquid is clear.

Boil water in a cauldron and add a couple of pinches of salt and lard to it. Wait until it is completely melted and add the cereal. Bring to a boil and reduce heat to medium, cover the container with a lid. The porridge will gurgle under it. Stir it occasionally to keep it from burning.

As soon as the porridge becomes thick, turn off the heat and leave the hominy under the lid for steaming for 20-25 minutes.

Gently walk around the edges with a silicone spatula and cover the container with a plate, turn the cauldron upside down and put a layer of hominy on a plate. Cut into portions. Serve corn grits hominy with sour cream, cracklings, fresh herbs. You can complement the dish with grated cheese or feta cheese.
