Stewed cabbage with beets has worked well in our family as a dish for a bowel cleansing diet. But do not think that it is tasteless, since it is dietary! Thanks to one secret, this option may even be tastier than ordinary stewed cabbage. But this … not because of the beets, but because of the vegetable marrow. Which, in fact, is absolutely not visible, but it is there, and it gives the stewed cabbage with beets such a taste that one might even think that it was done in meat broth. Although the dish is lean, it is vegan, there is nothing at all, except vegetables and oil, no! But the zucchini makes the consistency more slimy (and the beets hide it remarkably from those comrades who claim that they do not eat zucchini).
By the way, I think you noticed that my beets are not ordinary, but boiled. There was no usual on sale, only this. But in the course of cooking stewed cabbage with beets, I will tell you both recipe options: with boiled and raw.
We clean and cut carrots and zucchini into thin strips. If the beets are raw, then we do the same with them.
Cut the cabbage thinly.
In a deep saucepan of large diameter, fry the carrots with zucchini in three tablespoons of vegetable oil. If the beets are raw, then at the end add the beets along with a couple of tablespoons of vinegar.
In several steps we add cabbage to the fried vegetables, each time we mix everything well so that it is mixed evenly. Set the heat to a minimum, cover the pan with a lid and simmer the cabbage over low heat until it becomes soft.
It makes sense to cut boiled beets when the cabbage is already stewed.
Add chopped boiled beets and seasonings (salt, vinegar) to soft cabbage. We stir everything so that the stewed cabbage with beets are evenly colored.
You can serve this dish with fresh herbs. However, it is possible without it, that's the final touch.
