Fried polenta (polenta fritta) can be used as a side dish, as an independent dish, or as a dessert. In southern Italy (in the Naples region), it belongs to antipasti (hot snacks), served before the main meal. I usually make fried polenta from yesterday's leftovers - I just boil a larger portion at a time and pour off the stock the next day, very convenient. Of course, you can fry and pieces of fresh polenta, but it is difficult to make them in such a clear shape as from those that have already stood and cooled down.

Fried polenta is a tasty and high-calorie dish for fasting or vegetarian diets. But it can be sprinkled with grated cheese, and for desserts - sugar.

Stir polenta grits in a quarter volume of water (or in another amount, according to the recommendations on the package) with seasoning for the broth to taste. Stir the polenta from time to time, bring it to a boil, reduce heat to low and cook the polenta under the lid for 20-25 minutes. You can stir it a couple of times during this time.

Lubricate the mold with oil and put it in the refrigerator. For this recipe, it is better to use a rectangular shape - for example, a jelly tray.

Pour the freshly cooked polenta into a tray and let it cool completely and become dense.

Cut strips from polenta, cut them into rectangles, squares or triangles.

Lightly fry the polenta in a lot of oil on both sides.

You can blot off excess oil before serving.
