The broccoli bean puree soup can be cooked in a saucepan on the stove top or in a slow cooker using the Soup or Stew modes. Cooked in water, it will be lean, and using meat or chicken broth, we will get a more satisfying and rich soup.
To give broccoli puree more thickness, potatoes are most often used, sometimes flour. Also a good option is to add ready-made, for example, canned beans. If you want the soup to stay green, then use white beans.
To make broccoli puree soup in a slow cooker, prepare the ingredients as listed.
Chop the onion and carrots coarsely and simmer in olive oil until soft, add a little salt.
For this version of the soup, I took chicken broth, which was formed when I cooked chicken breasts for a salad in a slow cooker for 20 minutes.
It is recommended to cook all vegetables for the soup in a little water, just so that they are slightly hidden with water.
Place in boiling water or broccoli broth. Here it is frozen, which has just been rinsed in cold water from ice glaze and possible contamination.
Throw in onions and carrots next. Leave on the "Soup" or "Stew" mode for 20 minutes.
Add canned beans at the end of cooking.
Cook everything together for another five minutes and then puree.
Add boiling water or broth to the desired consistency.
Broccoli puree soup in a slow cooker is ready.
