Zucchini paprikash is a delicious homemade vegetarian dish! Perfect with: rice, potatoes, buckwheat for lunch or dinner!

Ingredients

Zucchini - 400 g

Sweet pepper - 150 g

Tomatoes - 150 g

Onions - 130 g

Sour cream - 170 g

Wheat flour - 1 tbsp.

Water - 50 ml + 2 tbsp.

Salt - 1 tsp

Smoked paprika - 0.5 tsp

Ground black pepper - on the tip of a knife

Vegetable oil - 1 tbsp.

Parsley - a couple of twigs

Step by step recipe with photo

Vegetable paprikash is best made from young zucchini. If the skin is very tender, then you do not need to cut it off. I added smoked paprika, it gives a much richer taste. If you take ordinary paprika, then the amount of this spice can be increased. The most delicious thing about this dish, in my opinion, is the gravy, which is formed during the cooking process. Thick, with a delicate creamy taste, which completely depends on the taste of the sour cream itself, so choose natural sour cream, high quality and fresh.

Any greens can be added.

Peel and finely chop the onion. Heat vegetable oil in a skillet, put onion and fry it lightly, stirring frequently.

Rinse sweet peppers, peel and cut into small cubes, add to a frying pan to the onion. Add paprika. Simmer all together for 3 minutes.

Add the zucchini, cut into small cubes.

Rinse the tomatoes and cut into small pieces. Add to the rest of the vegetables. Simmer for another 5 minutes.

Combine sour cream with flour, stir and add water. The amount of water may be higher if the sour cream is very thick.

Add salt and pepper. Stir and simmer covered over low heat for 10 minutes.

Add chopped herbs. Stir and serve the vegetable paprikash to the table.
