Ingredients

  • 1 sheet puff pastry thawed
  • 4 oz goat cheese crumbled
  • 1 large apple thinly sliced (Granny Smith or Honeycrisp recommended)
  • 1 tbsp honey
  • 1 egg beaten with 1 tbsp water for egg wash
  • 1 tsp fresh thyme leaves

Equipment

  • 1 Baking Sheet
  • 1 Parchment Paper
  • 1 Pastry Brush

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, unfold the puff pastry sheet and cut into 8 equal rectangles.
  3. Arrange a few apple slices on one half of each pastry rectangle. Top with crumbled goat cheese, fresh thyme, and a drizzle of honey.
  4. Fold the empty half of the pastry over the filling. Press the edges firmly with a fork to seal.
  5. Brush the top of each croissant with the egg wash.
  6. Bake for 15-20 minutes, or until puffed and golden brown. Serve warm.

Notes

Tip 1: Ensure your puff pastry is cold before you start to get the flakiest layers.
Tip 2: For an extra layer of flavor, add some toasted walnuts or pecans with the goat cheese.
Tip 3: Don't skip the egg wash; it's essential for achieving that beautiful, shiny golden-brown crust.
