- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced onion and bell peppers. Cook for 5-7 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
- Stir in the jerk seasoning and cook for 1 minute to toast the spices. Reduce heat to low, then pour in the heavy cream and vegetable broth. Bring to a gentle simmer, stirring.
- Slowly whisk in the freshly grated Parmesan cheese until the sauce is smooth and thickened. Season with salt and pepper to taste.
- Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water if the sauce is too thick. Garnish with green onions and serve immediately.
