  • 16 oz Penne Pasta or other short pasta
  • 1 tbsp Olive Oil
  • 1 Red Bell Pepper thinly sliced
  • 1 Yellow Bell Pepper thinly sliced
  • 1 Green Bell Pepper thinly sliced
  • 1 medium Onion thinly sliced
  • 3 cloves Garlic minced
  • 2 tbsp Jerk Seasoning paste or dry, adjust to taste
  • 2 cups Heavy Cream
  • 0.5 cup Vegetable Broth
  • 1 cup Parmesan Cheese freshly grated
  • 0.25 cup Green Onions chopped, for garnish
  • Salt and Pepper to taste

  • 1 Large skillet or Dutch oven

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced onion and bell peppers. Cook for 5-7 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
  3. Stir in the jerk seasoning and cook for 1 minute to toast the spices. Reduce heat to low, then pour in the heavy cream and vegetable broth. Bring to a gentle simmer, stirring.
  4. Slowly whisk in the freshly grated Parmesan cheese until the sauce is smooth and thickened. Season with salt and pepper to taste.
  5. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water if the sauce is too thick. Garnish with green onions and serve immediately.

Tip 1: For a heartier meal, add 1 lb of seasoned and cooked chicken or shrimp to the pasta.
Tip 2: To make this recipe vegan, substitute heavy cream with full-fat coconut milk and use a vegan Parmesan alternative.
