- Slice each Medjool date lengthwise to create an opening, but do not cut all the way through. Remove the pit. Spoon about a teaspoon of peanut butter into each date, then press a few peanuts into the filling.
- Place the stuffed dates on a parchment-lined baking sheet and freeze for 10-15 minutes until firm.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Remove the dates from the freezer. Dip each date into the melted chocolate, using a fork to coat it completely. Tap the fork on the side of the bowl to remove excess chocolate.
- Place the chocolate-covered dates back on the parchment paper. Sprinkle immediately with flaky sea salt. Refrigerate for at least 30 minutes for the chocolate shell to harden completely.
