Date Snickers (The Viral Healthy Treat Everyone's Making)

Ingredients
  

  • 12 whole Medjool dates Ensure they are plump and soft.
  • 1/4 cup creamy peanut butter Natural, unsweetened is preferred.
  • 1/4 cup roasted salted peanuts Roughly chopped.
  • 1 cup dark chocolate chips 60% cacao or higher.
  • 1 teaspoon coconut oil
  • 1 teaspoon flaky sea salt For sprinkling.

  • 1 Parchment-lined baking sheet
  • 1 Microwave-safe bowl

Method
 

  1. Slice each Medjool date lengthwise to create an opening, but do not cut all the way through. Remove the pit. Spoon about a teaspoon of peanut butter into each date, then press a few peanuts into the filling.
  2. Place the stuffed dates on a parchment-lined baking sheet and freeze for 10-15 minutes until firm.
  3. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  4. Remove the dates from the freezer. Dip each date into the melted chocolate, using a fork to coat it completely. Tap the fork on the side of the bowl to remove excess chocolate.
  5. Place the chocolate-covered dates back on the parchment paper. Sprinkle immediately with flaky sea salt. Refrigerate for at least 30 minutes for the chocolate shell to harden completely.

Notes

Date Tip: If your dates are dry, soak them in warm water for 10 minutes and pat dry before using.
Storage: Store in an airtight container in the refrigerator for up to 2 weeks.
