- Finely chop 6 of the hard-boiled eggs and place them in a medium mixing bowl.
- For the remaining 2 eggs, separate the yolks from the whites. Add the yolks to the bowl. Finely chop the 2 egg whites and set aside.
- To the bowl, add the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Stir until well combined and creamy.
- Gently fold in the reserved chopped egg whites. Cover and refrigerate for at least 30 minutes.
- Transfer to a serving bowl. Garnish with a sprinkle of smoked paprika and fresh chives before serving.
