Ingredients
  

  • 8 large hard-boiled eggs peeled and cooled
  • 1/2 cup mayonnaise full-fat recommended
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground
  • Smoked paprika for garnish
  • 1 tbsp fresh chives chopped, for garnish

Method
 

  1. Finely chop 6 of the hard-boiled eggs and place them in a medium mixing bowl.
  2. For the remaining 2 eggs, separate the yolks from the whites. Add the yolks to the bowl. Finely chop the 2 egg whites and set aside.
  3. To the bowl, add the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Stir until well combined and creamy.
  4. Gently fold in the reserved chopped egg whites. Cover and refrigerate for at least 30 minutes.
  5. Transfer to a serving bowl. Garnish with a sprinkle of smoked paprika and fresh chives before serving.

Notes

Don't Over-mix: Mix until just combined to maintain a nice texture.
