Garlic Butter Chicken Casserole
  • 4 boneless, skinless chicken breasts about 1.5 lbs
  • 1.5 cups long-grain white rice uncooked
  • 2.5 cups chicken broth
  • 0.5 cup unsalted butter melted
  • 1 tbsp minced garlic about 4-5 cloves
  • 2 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 2 tbsp fresh parsley chopped, for garnish

  • 1 Aluminum foil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a 9x13 inch baking dish, pour in the chicken broth and melted butter. Add the minced garlic, Italian seasoning, onion powder, salt, and pepper. Whisk everything together directly in the dish.
  3. Sprinkle the uncooked rice evenly across the bottom of the dish. Place the chicken breasts on top of the rice mixture in a single layer.
  4. Cover the dish tightly with aluminum foil. Bake for 35-45 minutes.
  5. Carefully remove the foil. The rice should be tender and the chicken should be cooked through (165°F or 74°C).
  6. Let the casserole rest for 5 minutes. Garnish with fresh parsley and serve warm.
