- Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
- If using the streusel topping, combine oats, flour, coconut sugar, and cinnamon in a small bowl. Add the melted coconut oil and mix with a fork until crumbly. Set aside.
- In a large bowl, whisk together the dry ingredients: 1.5 cups rolled oats, 1 cup whole wheat flour, baking powder, baking soda, 1.5 tsp cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the wet ingredients: applesauce, Greek yogurt, maple syrup, eggs, and 1/4 cup melted coconut oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apples.
- Pour the batter into the prepared pan and spread evenly. Sprinkle with the streusel topping, if using.
- Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan on a wire rack for at least 20 minutes before slicing and serving.
