For the Cake
  • 1.5 cups rolled oats Old-fashioned, not quick oats
  • 1 cup whole wheat flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp salt
  • 1 cup unsweetened applesauce
  • 0.5 cup Greek yogurt Plain, full-fat recommended
  • 0.5 cup maple syrup
  • 2 large eggs
  • 0.25 cup coconut oil melted
  • 1.5 cups apples peeled and diced
For the Streusel Topping (Optional)
  • 0.5 cup rolled oats
  • 2 tbsp whole wheat flour
  • 2 tbsp coconut sugar
  • 0.5 tsp cinnamon
  • 2 tbsp coconut oil melted

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. If using the streusel topping, combine oats, flour, coconut sugar, and cinnamon in a small bowl. Add the melted coconut oil and mix with a fork until crumbly. Set aside.
  3. In a large bowl, whisk together the dry ingredients: 1.5 cups rolled oats, 1 cup whole wheat flour, baking powder, baking soda, 1.5 tsp cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk the wet ingredients: applesauce, Greek yogurt, maple syrup, eggs, and 1/4 cup melted coconut oil.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the diced apples.
  7. Pour the batter into the prepared pan and spread evenly. Sprinkle with the streusel topping, if using.
  8. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan on a wire rack for at least 20 minutes before slicing and serving.
