- Preheat oven to 400°F (200°C). Spread the prepared carrots in a single, even layer on a large rimmed baking sheet.
- In a small saucepan over low heat, melt the butter. Stir in the honey and minced garlic, and cook for about 30-60 seconds until fragrant.
- Pour the honey garlic butter mixture over the carrots. Toss well to ensure all carrots are evenly coated. Season with salt and pepper.
- Roast for 20-25 minutes, tossing halfway through, until the carrots are tender and the edges are caramelized.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
