Ingredients
  

  • 2 lbs carrots peeled and sliced 1/2-inch thick on a bias
  • 1/4 cup unsalted butter
  • 3 tbsp honey
  • 4 cloves garlic minced
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Spread the prepared carrots in a single, even layer on a large rimmed baking sheet.
  2. In a small saucepan over low heat, melt the butter. Stir in the honey and minced garlic, and cook for about 30-60 seconds until fragrant.
  3. Pour the honey garlic butter mixture over the carrots. Toss well to ensure all carrots are evenly coated. Season with salt and pepper.
  4. Roast for 20-25 minutes, tossing halfway through, until the carrots are tender and the edges are caramelized.
  5. Remove from the oven, garnish with fresh parsley, and serve immediately.
