- In a small bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil to create the glaze. Set aside.
- Pat the chicken thigh pieces dry and season lightly with salt and pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- Pour the honey-soy glaze into the hot skillet. Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened slightly.
- Return the chicken to the skillet. Toss to coat the chicken completely in the glaze. Let it simmer for 1 more minute.
- Serve immediately, garnished with toasted sesame seeds and sliced green onions.

Tip 1: For an extra thick glaze, make a slurry by mixing 1 teaspoon of cornstarch with 2 teaspoons of cold water and add it to the simmering sauce.
