Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 tbsp vegetable oil
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp toasted sesame seeds for garnish
  • 2 green onions thinly sliced, for garnish

Method
 

  1. In a small bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil to create the glaze. Set aside.
  2. Pat the chicken thigh pieces dry and season lightly with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  4. Pour the honey-soy glaze into the hot skillet. Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened slightly.
  5. Return the chicken to the skillet. Toss to coat the chicken completely in the glaze. Let it simmer for 1 more minute.
  6. Serve immediately, garnished with toasted sesame seeds and sliced green onions.

Tip 1: For an extra thick glaze, make a slurry by mixing 1 teaspoon of cornstarch with 2 teaspoons of cold water and add it to the simmering sauce.
