Hot Honey BBQ Chicken Quesadillas (Easy & Crispy!)

Ingredients
  

For the Hot Honey BBQ Sauce
  • 1/2 cup BBQ sauce your favorite brand
  • 1/4 cup honey
  • 1 tbsp sriracha or more, to taste
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
For the Quesadillas
  • 3 cups cooked shredded chicken from a rotisserie chicken is great
  • 4 large flour tortillas 8-10 inch size
  • 2 cups shredded cheese blend Monterey Jack and Cheddar mix
  • 1/4 cup red onion finely chopped
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp butter or oil for cooking

  • 1 Large Skillet
  • 1 Small saucepan
  • 2 Mixing bowls

Method
 

  1. Make the Sauce: In a small saucepan over medium heat, whisk together the BBQ sauce, honey, sriracha, apple cider vinegar, garlic powder, and onion powder. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened.
  2. Prepare the Filling: In a medium bowl, combine the shredded chicken with about half of the prepared hot honey BBQ sauce, or more to your liking. Stir until the chicken is evenly coated. Mix in the finely chopped red onion and cilantro.
  3. Assemble: Lay a tortilla flat. Sprinkle about 1/4 cup of cheese over one half of the tortilla. Top with a portion of the chicken mixture, then another 1/4 cup of cheese. Fold the other half of the tortilla over the filling.
  4. Cook: Heat butter or oil in a large skillet over medium heat. Cook the quesadilla for 3-4 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted.
  5. Serve: Remove from the skillet, let rest for one minute, then slice into wedges. Serve immediately with your favorite toppings.

Notes

Use freshly shredded cheese for the best melt.
Don't cook on high heat, or the tortilla will burn before the cheese melts.
A rotisserie chicken is a great time-saver for this recipe.
