- Prepare the Grinder Salad: In a medium bowl, whisk together the mayonnaise, red wine vinegar, garlic powder, 1/2 tsp of the dried oregano, salt, and pepper until smooth.
- Add the shredded iceberg lettuce, thinly sliced red onion, and banana pepper rings to the dressing. Toss well to combine. Set aside.
- Prepare the Sandwiches: Preheat your oven's broiler on high. Slice the hoagie rolls lengthwise, leaving one side intact. Place them open-faced on a large baking sheet.
- Drizzle the cut sides of the bread with olive oil and sprinkle with the remaining 1/2 tsp of dried oregano.
- Layer the Ingredients: Place 2 slices of provolone cheese on each roll. Top with layers of ham, salami, and pepperoni.
- Toast: Place the baking sheet under the broiler for 2-4 minutes, watching carefully, until the bread is golden brown and the cheese is completely melted and bubbly.
- Assemble and Serve: Remove the sandwiches from the oven. Layer the tomato slices over the melted meats. Pile a generous amount of the prepared grinder salad on top. Fold the sandwich closed, slice in half, and serve immediately.
