  • 1 cup Rolled Oats Quick oats also work
  • 1 cup Cottage Cheese Full-fat or 2% recommended for creaminess
  • 1/2 cup Vanilla Protein Powder Whey or plant-based
  • 1/2 cup Fresh Blueberries
  • 1 Lemon Zest and juice
  • 2 tbsp Honey or Maple Syrup Adjust to taste
  • 2 tbsp Chia Seeds

Method
 

  1. In a food processor, combine the cottage cheese, lemon juice, and honey. Blend until completely smooth and creamy.
  2. In a large mixing bowl, stir together the rolled oats, protein powder, chia seeds, and lemon zest.
  3. Pour the blended cottage cheese mixture into the bowl with the dry ingredients and mix until well combined.
  4. Gently fold in the fresh blueberries, being careful not to crush them.
  5. Cover the bowl and refrigerate for at least 30 minutes to make the mixture easier to roll.
  6. Scoop 1-2 tablespoons of the mixture and roll into balls. If desired, coat in shredded coconut or hemp hearts.
  7. Place the bites in an airtight container and store in the refrigerator for up to 5 days.

Notes

Don't skip the chilling time, as it's crucial for making the dough easy to handle.
If using frozen blueberries, thaw and pat them dry first to avoid excess moisture.
