Ingredients
  

  • 1.5 cups Rolled Oats Old-fashioned oats work best.
  • 1 cup Vanilla Protein Powder Use your favorite brand, whey or plant-based.
  • 0.5 cup Creamy Almond Butter Can substitute with another nut or seed butter.
  • 0.33 cup Maple Syrup Or honey/agave.
  • 0.5 tsp Peppermint Extract Adjust to taste.
  • 0.5 cup Mini Chocolate Chips Dairy-free if needed.
  • 1-2 tbsp Water As needed, for consistency.

  • 1 Large Mixing Bowl
  • 1 Cookie Scoop (optional, for uniform size)

Method
 

  1. In a large mixing bowl, stir together the rolled oats and vanilla protein powder until evenly combined.
  2. Add the almond butter, maple syrup, and peppermint extract to the bowl. Mix thoroughly with a spatula or your hands until a sticky dough forms.
  3. Gently fold in the mini chocolate chips. If the mixture is too dry, add 1-2 tablespoons of water until it holds together.
  4. Scoop out about 1.5 tablespoons of the mixture at a time and roll it between your hands to form a smooth ball.
  5. Place the balls on a parchment-lined plate and refrigerate for at least 30 minutes to allow them to firm up before serving.

Notes

For best results, use a 'drippy' almond butter for easier mixing.
Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
