- In a large mixing bowl, stir together the rolled oats and vanilla protein powder until evenly combined.
- Add the almond butter, maple syrup, and peppermint extract to the bowl. Mix thoroughly with a spatula or your hands until a sticky dough forms.
- Gently fold in the mini chocolate chips. If the mixture is too dry, add 1-2 tablespoons of water until it holds together.
- Scoop out about 1.5 tablespoons of the mixture at a time and roll it between your hands to form a smooth ball.
- Place the balls on a parchment-lined plate and refrigerate for at least 30 minutes to allow them to firm up before serving.
Notes
For best results, use a 'drippy' almond butter for easier mixing.
