Potsticker Stir Fry (Quick & Easy Recipe)

Ingredients
  

  • 1 package frozen potstickers (16 oz), pork, chicken, or vegetable
  • 2 tbsp avocado oil divided
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 cup shredded carrots
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 green onions sliced, for garnish
  • 1 tsp sesame seeds for garnish
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp cornstarch

Method
 

  1. Prepare the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and cornstarch. Set aside.
  2. Cook the Potstickers: Heat 1 tbsp of avocado oil in a large skillet over medium-high heat. Place frozen potstickers in a single layer and cook for 2-3 minutes until bottoms are golden brown. Add 2 tbsp of water, cover, and steam for 3-4 minutes until cooked through. Remove from skillet.
  3. Stir-Fry Vegetables: Add the remaining 1 tbsp of oil to the skillet. Add broccoli and stir-fry for 2-3 minutes. Add bell pepper and carrots, and continue to cook for 3-4 minutes until tender-crisp. Stir in garlic and ginger and cook for 30 seconds until fragrant.
  4. Combine and Serve: Return the potstickers to the skillet. Re-whisk the sauce and pour it over the stir fry. Stir constantly for 1-2 minutes until the sauce thickens. Garnish with green onions and sesame seeds before serving.

Notes

Don't overcrowd the pan; cook in batches if necessary for the best texture.
Have all ingredients prepped before starting, as stir-frying is a quick cooking process.
You can easily substitute vegetables like snow peas, bok choy, or mushrooms.
