Ingredients

  • 1 lb hot ground pork sausage
  • 8 oz cream cheese softened
  • 10 oz Rotel Original Diced Tomatoes & Green Chilies drained well
  • 2 cups shredded sharp cheddar cheese
  • 2 cups all-purpose baking mix like Bisquick

Equipment

  • 1 Large Mixing Bowl
  • 1 Baking Sheet
  • Parchment Paper

Method

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground sausage, softened cream cheese, well-drained Rotel, shredded cheddar cheese, and baking mix. Mix until just combined, being careful not to overmix.
  3. Roll the mixture into 1-inch balls and place them about an inch apart on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the sausage balls are golden brown and cooked through.
  5. Let them cool for a few minutes before serving. Enjoy!

Notes

Tip 1: For the best results, shred your own cheese from a block. It melts better and has a superior flavor.
Tip 2: Use a small cookie scoop to create uniformly sized sausage balls for even cooking.
Tip 3: Do not overmix the ingredients, as this can lead to tough and dense sausage balls.
