Method
- Place a pizza stone or steel on a rack in the lower third of your oven and preheat to 500°F (260°C). While the oven heats, cook the spicy Italian sausage in a skillet over medium-high heat until browned. Drain any excess grease.
- On a lightly floured surface, stretch the pizza dough into a 12 to 14-inch round. Place the shaped dough onto a piece of parchment paper or a floured pizza peel.
- Spread pizza sauce evenly over the dough, leaving a small border. Top with shredded mozzarella, the cooked sausage, crumbled feta, and thinly sliced red onion.
- Slide the pizza onto the preheated stone or steel. Bake for 8-12 minutes, until the crust is golden and the cheese is bubbly and melted.
- Remove the pizza from the oven and let it rest for a minute. Drizzle generously with honey, then garnish with fresh basil and optional red pepper flakes. Slice and serve immediately.
Notes
For the best results, use a very hot oven; a pizza stone or steel makes a huge difference in crust texture.
Don't be shy with the honey drizzle; the sweetness is key to balancing the spicy sausage and salty feta.
Letting your dough come to room temperature before stretching will make it much easier to handle.
