  • 1 pound pizza dough store-bought or homemade
  • 1/2 pound spicy Italian sausage casings removed
  • 1/2 cup pizza sauce
  • 1 1/2 cups low-moisture mozzarella cheese shredded
  • 4 ounces feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons honey or hot honey
  • 1/4 cup fresh basil chopped
  • 1 teaspoon red pepper flakes optional

Method
 

  1. Place a pizza stone or steel on a rack in the lower third of your oven and preheat to 500°F (260°C). While the oven heats, cook the spicy Italian sausage in a skillet over medium-high heat until browned. Drain any excess grease.
  2. On a lightly floured surface, stretch the pizza dough into a 12 to 14-inch round. Place the shaped dough onto a piece of parchment paper or a floured pizza peel.
  3. Spread pizza sauce evenly over the dough, leaving a small border. Top with shredded mozzarella, the cooked sausage, crumbled feta, and thinly sliced red onion.
  4. Slide the pizza onto the preheated stone or steel. Bake for 8-12 minutes, until the crust is golden and the cheese is bubbly and melted.
  5. Remove the pizza from the oven and let it rest for a minute. Drizzle generously with honey, then garnish with fresh basil and optional red pepper flakes. Slice and serve immediately.

Notes

For the best results, use a very hot oven; a pizza stone or steel makes a huge difference in crust texture.
Don't be shy with the honey drizzle; the sweetness is key to balancing the spicy sausage and salty feta.
Letting your dough come to room temperature before stretching will make it much easier to handle.
