Slow Cooker Beef and Broccoli (Better Than Takeout!)

  • 2 lbs chuck roast or flank steak sliced thin against the grain
  • 1 cup low sodium beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 4 cups fresh broccoli florets
  • 3 tablespoons cornstarch
  • 1/4 cup cold water

Method
 

  1. In the basin of your slow cooker, whisk together the beef broth, soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger until well combined.
  2. Add the sliced beef to the slow cooker and stir to ensure it's fully coated in the sauce. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  3. About 30 minutes before the cooking time is complete, add the fresh broccoli florets to the slow cooker. Stir gently, cover, and continue to cook until the broccoli is tender-crisp.
  4. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Pour the slurry into the slow cooker and stir gently. The sauce will thicken as it heats.
  5. Once the sauce has thickened, your Slow Cooker Beef and Broccoli is ready. Serve it hot over a bed of fluffy rice or noodles, and garnish with sesame seeds and green onions if desired.

Notes

For a deeper flavor, sear the beef in a hot skillet before adding it to the slow cooker.
Do not add the broccoli until the last 30 minutes to prevent it from getting mushy.
You can add a teaspoon of red pepper flakes to the sauce for a spicy kick.
