Dip Ingredients
  • 1 lb lean ground beef 85/15 or 90/10 recommended
  • 8 oz cream cheese softened to room temperature
  • 16 oz Velveeta cheese cubed
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 pinch salt and black pepper to taste
  • 1/2 cup mayonnaise
  • 2 tbsp dill pickle relish
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp paprika

Equipment

  • 1 Slow Cooker A 4-quart or larger slow cooker is recommended.
  • 1 Skillet For browning the ground beef.

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef with the diced onion until the beef is no longer pink. Add the minced garlic and cook for one more minute until fragrant. Drain off any excess grease.
  2. Transfer the cooked beef and onion mixture to the slow cooker. Add the cubed Velveeta, softened cream cheese, Worcestershire sauce, salt, and pepper.
  3. Stir everything together, cover the slow cooker, and cook on LOW for 2-3 hours or on HIGH for 1-1.5 hours, stirring every 30-45 minutes to prevent sticking and ensure even melting.
  4. While the dip is cooking, whisk together all the 'Special Sauce' ingredients (mayonnaise, relish, ketchup, mustard, vinegar, onion powder, paprika) in a small bowl until smooth. Cover and refrigerate until ready to serve.
  5. Once the dip is fully melted and hot, give it one final stir. Pour into a serving dish and drizzle generously with the special sauce. Garnish with optional toppings like shredded lettuce, diced pickles, and sesame seeds before serving.

Notes

Tip 1: For the creamiest dip, make sure your cream cheese is at room temperature before adding it to the slow cooker.
Tip 2: Don't skip draining the grease from the ground beef! This is the most important step for preventing a greasy dip.
Tip 3: The dip can be kept on the 'WARM' setting in the slow cooker for several hours, making it perfect for parties.
