Ingredients

  • 1/2 cup unsalted butter melted
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips and chunks a mix is recommended
  • 1 teaspoon flaky sea salt for topping

Equipment

  • 1 8-inch Cast-Iron Skillet A 6-inch skillet will also work for a thicker cookie.
  • 1 Mixing Bowl

Method

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8-inch cast-iron skillet with butter.
  2. In a medium bowl, whisk together the melted butter, brown sugar, and granulated sugar. Add the egg and vanilla extract and whisk until smooth.
  3. Add the flour, baking soda, and salt. Stir with a spatula until just combined. Do not overmix.
  4. Gently fold in the chocolate chips and chunks.
  5. Press the cookie dough evenly into the prepared skillet. Top with extra chocolate chips and a sprinkle of flaky sea salt.
  6. Bake for 18-22 minutes, until the edges are golden and the center is set but still soft.
  7. Let it cool for 5-10 minutes. Serve warm, topped with a scoop of vanilla ice cream.

Notes

Do not overbake: For a perfectly gooey center, remove the skillet from the oven when the middle still looks slightly underdone.
Serving Suggestion: This skillet cookie is best served immediately with a scoop of your favorite ice cream and two spoons!
